BBQ Rubbed Chicken Thighs:
1.25 lbs Chicken Thighs (Skin on)
1 Tablespoon Peanut Oil
3 Tablespoons CLASSIC BBQ DRY RUB
1) Rub the chicken with the Peanut Oil and then with the CLASSIC BBQ DRY RUB. Wrap tightly with plastic wrap. Refrigerate at least 2 hours or up to 4 hours. Let sit out at room temperature for up to 30 minutes before cooking.
2) Place chicken in a 400 degree preheated grill/smoker/oven and cook until the internal temperature of the chicken reaches 165 degrees.
3) Remove from grill/smoker/oven, let rest for 5-10 minutes, and ENJOY!!!
Serve with Easy Homemade Seasoned Fries, TEX-MEX Corn on the Cob, or Roasted Corn on the Cob.
Tidbits: It is important to let the chicken rest for 5-10 minutes after cooking to allow the juices time to reabsorb into the meat fibers, leading to a more succulent texture.
